Baron di Pauli personally guarantees the ripeness and soundness of the grapes from the ‘Höfl unterm Stein’ vineyard. A gentle pressing, natural cellaring and controlled fermentation form the foundations of this brilliant topaz wine. Aromas of roses and honeysuckle, cinnamon and mint invite the drinker to try more of this charming wine. Smooth and harmonious on the palate, the wine seduces with an aromatic, spicy finish.
Recommendation:
This wine is captivating as an aperitif, or paired with shrimp or ocean fish, Asian cuisine, turkey paté, or risotto.
Serving Temperature: 11-13 C
Trifall: a sloping vineyard with a southerly exposure between the towns of Kaltern and Oberplanitzing at 450 – 500 meters above sea level;
Söll: a southeast facing vineyard situated above Tramin at 480 – 550 meters above sea level.
Site/Soil
Both vineyards are very well-ventilated, and therefore have the possibility of a healthy, late harvest; lots of sun and cool nights during the ripening phase. Soil: Trifall, loamy conglomerate soils on porphyry and granite base; Söll, loamy, chalky gravel with eroded porphyry

intense nose, rose blossoms, lychee, cloves, cinnamon, a hint of sage, complex and multi-faceted
- dense volume on the palate, very clean and direct, tropical fruit on the lingering finish
