Vineyard Age: From the 1990s, the vineyards were re-trained and reorganised in accord with a research and experimentation programme.
Vinification: Whole-cluster pressing, yielding about
60% free-run must, which is then cold-settled and racked. Fermentation is started, then must goes to small barrels to ferment and mature sur lie. Racked and blended in March-June, and bottled in July.
Sensory profile: Deep straw yellow. Classic ripe-fruit chardonnay nose, a blend of tropical fruit and vanilla, with appealing notes of spice. Elegant structure and superb finish. Name: Sistra (sistri) were ancient Egyptian musical instruments linked to the cult of Isis, goddess of agriculture, fertility, and of love that brings forth new life. The instrument, popular with the Greeks, Romans, and Hebrews, consisted of a horseshoe-shaped frame struck by moveable rods, creating a sound very similar to the German Glockenspiel.
