Once known as the "poor man's distillate", today grappa has evolved into an elegant and refined product. The change has taken place slowly thanks to new eating habits and better techniques in the various production processes. Here in Barbaresco, the marc is separated from the wine after fermentation and only lightly pressed so that it arrives at the distillery still moist and loaded with the flavours of the grapes. There is no storage, but distillation takes place immediately, within a few hours, in order to preserve the freshness of the flavours. The still works under vacuum so that the precious alcohol is extracted at 75° Celsius instead of 100° Celsius, a gentler process for a more elegant product. When tasted, the power and structure of Barbaresco are evident, but are well balanced by the finesse of the aromas and flavours of the Nebbiolo grape.
