Pinot grigio "Ramato" 2023 IGT - Zeni
Grape variety : Pinot Grigio
Vines: Guyot-pruned trellis, with planting distances of m 2.00 x 1.00 for a total of five thousand vines per hectare; one fruiting shoot per vine with a total load of 6/8 buds.
Vineyard :
"Fontane" is located in Campo Rotaliano and covers an area of 16,340 square metres.
Soils:
Alluvial, gravelly, former river bed, consisting of pebbles called "sassi robi", covered by a top layer of topsoil
Harvest time :
The first grapes were harvested on 6 and 7 September to obtain a relatively high acidity of about 8/9 g/l and a fairly uniform and not overripe skin colour to give the wine the typical "onion skin" colouring.
Vinification:
The hand-harvested grapes arrive whole at the winery, where they are crushed and pumped into steel tanks, where they spend a short resting period of around 12 hours
in contact with the skins. They are racked, decanted and the first fermentation, which is strictly controlled, begins. Normally, and especially this year, there is no second fermentation, which is a malolactic fermentation to preserve the fresh and fruity flavours.
After racking to separate the yeasts, it rests in cold steel vats until January.
Maturation:
Bottled in spring and put on sale after a short resting period.
The Pinot Grigio with its elegant and personal copper-coloured hue does not like long maturation. Its aroma of ripe pears should be savoured when young.
