Soft straw yellow with greenish reflections.
Nose:
Intense primary aroma, delicate, long lasting, excellent secondary aroma, great bouquet.
Taste: Lively, fresh, rich, balanced, delicate, fine.
Soil:
Good grain size, chalky-toned texture and sun exposure.
A small part of the must is fermented and aged in small French oak barrels.
Vinification:
Careful selection of grapes, very light pressing with exclusive use of first pressing wine. Chilling at 10-12 °C with natural settling. Fermentation only with indigenous yeasts, at controlled temperature between 16 and 17 °C for 25-30 days.
Fish starters, culurgiones (ravioli) with potato-mint filling, seafood risotto, artichoke risotto, linguine (flat spaghetti) with seafood dressing, steamed and grilled fish, white meats, medium mature cheeses.
